Leading the celebration was renowned Cebuano chef and Slow Food advocate Chef Sweetie Cañedo, who encouraged the hospitality industry to embrace the principles of the Slow Food Movement—food that is good, clean, and fair. She emphasized that true culinary excellence begins with respecting nature, preserving heritage ingredients, and recognizing the farmers, fisherfolk, and artisans whose dedication makes every meal possible.

The specially curated Independence Day buffet showcased dishes prepared using carefully selected local ingredients, many of which require time-honored methods of cultivation, harvesting, and processing.
